Join us as our home chefs show us how to cook a meal that will be delicious and soul warming. Every Thursday at 6pm EST one of our hosts will show us a favorite meal that is healthy, tasty, and easy to make, using what you have at home.

Thursday November 16th: Join us with Chef Rencher to make Vegetarian Baked Spaghetti

Recipe:


Ingredients:

· 2 boxes of spaghetti

· 4 cloves of fresh garlic

· 2 teaspoons of black pepper

· 4 oz of ricotta cheese

· 3 jars of Bertolli pasta sauce

· 2 white or yellow onions

· 4 tablespoons of Mrs. Dash Italian seasoning

· 1 egg

· 8 oz of fresh walnuts (unsalted) or a pound of ground beef

· Tablespoon of fennel

· 8 oz of shaved Parmesan

· 3 sweet peppers

· 16 oz of portobello or shiitake mushrooms

· 1 teaspoon of salt

· 16 oz of Mozzarella Cheese

· 8 oz of fresh spinach

· Medium casserole dish

· 2 medium pots

· Dutch oven

· Tablespoon of olive oil or unsalted butter

· Food processor or blender

· 1/4 cup of Worcestershire sauce

· 4 tablespoons of onion powder

· 4 tablespoons of garlic powder

Procedure:

Chef Note: Walnut “meat” (meat substitute. You can by pass this step if you don’t want to use a meat substitute) 

1. Soak the walnuts in water overnight.

2. Boil walnuts for 15-30 minutes.

3. Drain the water from the walnuts and pat them dry with a paper towel.

4. Place walnuts into a food processor.

5. Slice portobello mushrooms and add them to the food processor.

6. Season with salt, thyme, black pepper, onion, garlic, garlic and onion powder, and fennel.

7. Pulse blend the ingredients until the texture resembles that of ground beef.

8. Take a Dutch oven and place it on medium heat.

9. Add a tablespoon of oil.

10. Dice 2 cloves of garlic and add them to the pot.

11. Chop onions and add them to the pot once garlic has softened.

12. Chop remaining sweet peppers and add to the pot. Cook for 2-3 minutes or until softened.

13. Add walnut "meat" or a pound of ground beef.

14. Add seasonings (onion powder, garlic powder, Mrs. Dash’s Italian Seasoning, Worcestershire sauce, and black pepper).

15. Cook until the mixture is braised.

16. Add spinach to the mixture and cook until slightly wilted.

17. Add pasta sauce and reduce heat to low.

18. Use the second medium pot to fill with water, add a pinch of salt, and bring it to a boil.

19. Add the 2 boxes of pasta to the boiling water and cook until the pasta becomes bendable.

20. Strain the pasta and add it to the sauce. Mix well.

21. Preheat the oven to 400 degrees.

22. Prepare the casserole dish by layering sauce, spaghetti, mozzarella, Parmesan, and ricotta.

23. Repeat the layering until the dish is filled.

24. Top the entire pan with mozzarella, dollops of ricotta, and Parmesan (provolone optional).

25. Place the casserole into the oven for 15-30 minutes.

26. Let the bake cool for 10 minutes, then enjoy!
