Description

New date!

Here's your definitive guide to choosing, cooking and serving steak to perfection. Founder of Food Craft Institute and CEO of Belcampo, Anya Fernald, will be leading a unique two hour sensory session focusing on dry aged beef.

We'll Geek Out on:

  • the process of dry and wet aging beef and impact on texture and flavor
  • grain versus grass fed beef and what this means for your steak
  • different steak cuts and how to buy, cook and serve them
  • side by side tasting of pasture raised rib-eye steaks aged to 45days, 15 days and fresh-cut

Anya will share expert tips and tricks as she demonstrates how to perfectly cook steak at home. Over a glass of wine, we'll do a side-by-side tasting of steak cuts of various ages to fully understand this incredible process on the finished product.

You'll walk away empowered with knowledge about well sourced and aged meat, a better understanding of the science behind aging beef, some mad steak cooking skills and a happy palette.

All proceeds from Geek Out events will support FCI’s educational scholarships for low-income food makers. Since 2011 FCI has helped over 100 small food businesses launch or grow, with over 65% of students being women or minorities and 50% receiving financial aid.
