For the love of BREAD!

On Monday, July 22, join the Retail Bakers of America and Revent for an amazing day filled with HANDS-ON Artisan bread baking instruction with famed Certified Master Baker, Chef Eric Kastel. You will get personal attention as we spend the full day learning how to make white pan bread, baguette, challah, dinner rolls, and specialty/ethnic bread at the NEW Revent American Test Bakery in Somerset, New Jersey.

Space is limited to 20 attendees.

Participants must have some bread baking experience. This is a class for those ready to prepare for the Certified Baker Exam and Certified Master Baker Exam (not entry level bakers).

A Little About Chef Eric Kastel, CMB…

Originally from St. Louis, Eric’s career began similar to most graduates from The Culinary Institute of America, winding his way through hotels and restaurants, working every job on the line. All of that changed when he had the opportunity to learn the art of pastry under the tutelage of Chef Marcel “Death by Chocolate” Desaulniers at the famed Trellis Restaurant in Williamsburg, Virginia. His deep dive into baking and pastry found Chef Kastel at the new frontier of American artisan baking at Bread Alone in upstate New York where he met his lifetime love, bread. From there Eric moved into overseeing large scale bakery production and catering for Whole Foods in Dallas, Texas where he was known as the “bread doctor”.

Eric’s career brought him back to The Culinary Institute of America as a faculty member for nine years where he taught Artisan Breads, as well as the Hearth Breads Bootcamp, wrote the award winning “Artisan Breads at Home” book and earned the esteemed designation of Certified Master Baker. The last nine years Eric has been stretching his innovation muscle as the Director of Bakery Development for Panera Bread where he creates new products and refines the existing bread and pastry line. If you have ever stopped at one of Panera’s over 2,300 cafes in the United States, you have likely already enjoyed the fruits of his labor. Eric travels extensively in search of the perfect ingredients for his new projects but is still lucky enough to call the Hudson Valley of New York his home.
