Event Details

The League of Kitchens, founded by Lisa Gross '04, offers the most unsual cooking classes in New York, immersive culinary adventures where immigrants teach intimate cooking workshops in their homes, and participants encounter a new culture, cuisine, and neighborhood with every experience. Condé Nast Traveler calls it "Quite possibly the coolest foodie thing to do in New York, whether you're a visitor or local." 

Join us for a culinary and cultural adventure workshop with Aiko, whose workshops sell out months in advance. Aiko was born in Kagawa, a Japanese prefecture that is near Osaka and known for its udon noodles. The only girl in her large family, she learned to cook from her mother and grandmother. Although Aiko enjoys cooking food from many cuisines, she always follows certain Japanese principles like mottainai (avoiding waste), and ichiju sansai — literally “one soup three dishes” or a balanced approach to menu planning. 

Our 2.5 hour “Taste of” Japanese Cooking workshop will start off with a warm welcome to Aiko's home, where she will greet you with an assortment of teas and traditional homemade snacks. You will learn to prepare temaki zushi, or sushi hand rolls, which are a staple of Japanese family parties. You will also learn how to make miso soup with vegetables, using Aiko's unique combination of red and white miso, and okonomiyaki, a savory Japanese pancake made from shredded cabbage, scallions, and flour, vegetables and squid, and topped with pickled ginger, bonito flakes, Kewpie mayonnaise, and sweet/salty okonomiyakisauce. Finally you'll sit down together as a group and enjoy the meal you've made! You’ll go home with a booklet of recipes and in-depth culinary info so that you can re-create these delicious dishes at home.

Here's the menu which we will prepare with Aiko in her home kitchen in Manhattan:

Temaki Zushi (Sushi Hand Rolls)
Sushi hand rolls with assorted fillings and toppings, including: spicy raw tuna, tamago yaki (egg omelet), sauteed trumpet mushrooms and shiitake mushrooms, seasoned shaved okra, yamaimo (Japanese yam), radish sprouts, fresh shiso leaves, and salmon roe.

Miso Soup with Vegetables
A light soup made from miso and homemade dashi and ribbons of fried bean curd, simmered with a variety ofvegetables.

Okonomiyaki (Savory Pancakes with Vegetables and Squid)
Savory Japanese pancakes made from shredded cabbage, scallions, and flour, vegetables or squid, and topped with pickled ginger, bonito flakes, Kewpie mayonnaise, and sweet/salty okonomiyaki sauce. 

Prior to the class, you'll receive instructions from League of Kitchens with the exact location of your class and helpful tips for the day. 

Foodtober is a month of activities and events celebrating and examining our connection to food. Foodtober is organized by the Yale Alumni Association of New York, connecting Yalies with each other and our communities. Net proceeds from Foodtober events benefit The Yale Sustainable Food ProjectCity Growers and Just Food, and support YALE.NYC's ongoing programming.

If you are unable to use the tickets you have purchased, please let us know so that we can make your space available to our waitlist or scholarship attendees.
