One of the ways we can eat more local food is by preserving the bounty of our growing season for use in colder months. In conjunction with Ivy Tech Hospitality and Indy Food Swappers, Slow Food Indy is hosting an introductory level canning/preservation workshop for those who have always wanted to learn how, but just haven't gotten around to it yet! Suzanne Krowiak is the founder of Indy Food Swappers and a Master Food Preserver as certified by the Purdue Extension program. Please join us in one of the sparkling new kitchens at the Ivy Tech Culinary Center for this informal and hands on experience.
Suzanne will present a brief overview of food preservation techniques, and the rest of the class will be hands on experience in skills such as water bath canning, pickling, and jams! Participants will work in small groups of 4-6 with an experienced facilitator standing alongside as a guide. You will see how easy it is to can using a water bath, and also witness how modern restaurant equipment will accomplish the same task. At the end of the workshop, we will divide everything up for participants to take home, providing you some tasty local product to use at a later time. That's an education and a take home treat for one "slow" fee!
UPDATE: Plans at this point include red pepper jelly, pickled jalapenos, and canned tomatoes.
Please note that the Ivy Tech kitchens are commercial and professional, and as such we may send out some simple guidelines prior to the event for general safety and sanitation. ALSO ALL PARTICIPANTS IN THIS CLASS MUST BE AT LEAST 18 YEARS OF AGE. All are welcome to attend but this class and it will be tailored to the absolute beginner level.

global, grassroots movement with thousands of members in over 150 countries,
which links the pleasure of food with a commitment to community and the
environment. Slow Food Indy events are open to members and nonmembers alike
and membership is not prerequisite for participation.
