Back by popular demand again! The Capitol Hill Counseling and Resource Center is excited to continue the very popular "Food as Medicine" series, an interactive virtual cook-a-long class that connects health to food, led by acclaimed Nutritionist and Wholistic Health Coach, Anelise Antunes.

This is a COOK-ALONG class so a shopping list will be emailed to all participants before each class. The upcoming classes are below.

MONDAY, DECEMBER 19: Brazilian Stroganoff and Quentão (a Southern Brazilian Warm Drink)

We are celebrating December holidays! It's a time for great fellowship and delicious holiday food. We will continue with our theme on calories, especially as we try to not overeat at holiday functions. Good luck! Join Nutritionist and Cooking Class lead Anelise as she cooks a traditional main dish from her home country, Brazil. Even though the dish’s name is Russian, it is Brazilian! This is a cook-a-long class. Register by Thursday, December 15 to receive a shopping list and general instructions. All recipes are plant-based and non-alcoholic.

MONDAY, JANUARY 23: Roasted Herbed Potato, Asparagus, Cauliflower and Golden Beet Warm Salad with Sumac-Lemon Dressing

For this first cook-a-long of 2023, following the "Reset Your Health Themes", we will prepare a scrumptious yet rich, warm salad, “Roasted Herbed Potato, Asparagus, Cauliflower and Golden Beet Warm Salad with Sumac-lemon dressing.” That is indeed a mouthful! This is a cook-a-long class. Register by Thursday, January 19 to receive a shopping list and general instructions. All recipes are plant-based and non-alcoholic.

MONDAY, FEBRUARY 20: One-Pot Penne Pasta with Red Pepper Romanesco Sauce

Did you know that red beets, tomatoes, red kidney beans, red bell peppers, and most red foods have lycopene, a carotene; red grapes, pomegranates, cranberries have anthocyanins that helps protect against heart disease? Continuing to highlight Heart Health month, join Anelise in this cook-a-long session! Participants will cook a One-Pot Penne Pasta with Red Pepper Romanesco Sauce. It will be red indeed! This is a cook-a-long class. Register by Thursday, February 16 to receive a shopping list and general instructions. All recipes are plant-based and non-alcoholic.
