Ashley Watts, owner and manager of Local I'a, will conduct a class on fish breakdown and filleting. Ashley, through Local I'a, procures and markets seafood from very local, small scale fishers and producers, selling primarily at farmers' markets. She offers one of the few alternatives to the large scale industrial fishing that provides most of the fish we see in our markets.


The class will provide basic fish preparation instruction detailed to the species available. Examples include quick pan sear of filet or ahi chunk, how to make poke and cut sashimi, all local laulau, lettuce wraps, how to prepare whole fish, and fish curry.

Each participant will take home 1 serving of what is prepared and have tastings of the dish there as well. Apron is suggested and closed toed shoes required.
