Humanities Guåhan cordially invites you to #eatyourheritage in an interpretive five-course dinner featuring locally-sourced ingredients prepared by chefs Jo Ong and Mylene Valdez in collaboration with local chefs. The dinner is the culminating event to our fourth food democracy tour, Fiestan Salu Salo: Celebrating the Flavors of Guam and the Philippines from September 30 through October 5, 2019.

The Eat Your Heritage food democracy tour first began as a facet of the project, I Tano yan I Tasi, which aimed to inform and inspire island residents to engage with values, ideas, and actions that are central to a participatory democracy and a sustainable future for the island.  Eat Your Heritage specifically explores the important connections between food, health, culture and the environment in order to better “grow democracy” in our community. It’s a weeklong tour, which focuses on using locally grown and nutritious foods, as well as on issues of environmental and cultural sustainability. 

With our 4th democracy tour, Fiestan Salu Salo: Celebrating the Flavors of Guam and the Philippines, Humanities Guåhan highlights Guam’s important historical relationship with the Philippines through an exploration of Filipino and CHamoru food traditions. Humanities Guahån will welcome featured Filipino chefs Jo Ong and Mylene Valdez, who will collaborate with local artists, Peter Dueñas, Paul Kerner, Mirko Agostini and Jasmine Nadres. Together, they will make a culinary interpretation of Guam and the Philippines’ histories, cultures and interconnections, using a variety of local ingredients, which will be presented at the 5-course interpretive dinner event, October 5, 2019. Leading to the dinner event will be workshops with culinary art students in the public high schools and at GCC, community talks and a special pastry workshop with Chef Mylene.
