FD204 - FDA Temporary Food Establishments (TFE) Workshop is a two-day interactive training that will provide participants the skills to effectively conduct an application review, menu review, and inspection of a temporary food facility and institute corrective actions. This course will cover the key elements for conducting application reviews, menu reviews, and inspections of TFEs. Key steps for planning a national special security event or other large-scale special events are also covered. Methods of instruction include lectures with hands-on group exercises and discussion to reinforce performance-level concepts.

This workshop is being hosted by the Orange County Environmental Health Division.

Please note that no lunch will be provided. A listing of local eateries and hotels nearby will be provided prior to the event.

COURSE OBJECTIVES:

  • Discussion of the different types of TFEs and associated food safety concerns.

  • Key responsibilities, challenges, and conflicts for handling and regulating TFEs.

  • Given a scenario, evaluate public health risks associated with TFEs, associated risk factors, and public health interventions to address identified risks.

  • Given a TFE menu and application, determine how to mitigate any identified risk factors, hazardous conditions, and high-risk foods and preparation processes.

  • Evaluate equipment and facilities at a mock TFE, including premises, water supply and sewage disposal, to determine suitability of equipment and control of risk factors.

  • Complete a full inspection of a mock TFE.

  • Propose a plan for the unique considerations and resources needed to support TFEs at national special security events or other large-scale special events.

  • Assess different types of TFEs for control of associated food safety concerns.

COURSE PRE-REQUISITES:

IMPORTANT NOTE: All pre-requisites must be completed by December 7, 2018. Please obtain your FDAORAU/Compliance Wire login credentials as soon as possible to ensure sufficient time to meet all pre-requisites. Completion of all required pre-requisites will be verified prior to registration acceptance.

• FD112 Food Code or FDAFC01-FDAFC11 Food Code series (https:www.compliancewire.com)
• CC8033W HACCP (https://orauportal.fda.gov/)
• CC8001W Plumbing Controls for Commercial Food Establishments (https://orauportal.fda.gov/)
Required Pre-Course Work
• Conduct 25 retail food establishment inspections, including at least 3 temporary food establishment inspections.
• Read “CFP Temporary Food Establishment Guidance Final 2011” (http://www.foodprotect.org/)
Suggested Prerequisites
FEMA ICS 100 (https:www.training.fema.gov/ICS100)
FEMA ICS 200 (https:www.training.fema.gov/ICS200)

Sixteen (16) CEHUs will be awarded upon successful completion of the course.

REGISTRATION INFORMATION:

Registration is limited to a maximum of 2 per agency and pre-registration is required. Due to space limitations we will not accept "walk-in's". Note: Each eventbrite registered participant will be contacted by CDPH-FDB via email to verity contact and employer information.
