Description

Fats and oils are a ubiquitous component of our diets. They provide and store chemical energy, they make up our cell membranes, and even act as cellular messengers. Fats and oils are also used to make an essential, life-saving anti-bacterial substance—soap!

In this 3 hour class, students will use interactive molecular building exercises to get a feel for how lipid molecules bond and flex. We will emphasize how specific lipids are relevant to diet and health, and will use 3D computer modeling to view structures such as cholesterol-laden cell membranes. We will also discuss the chemistry of soap, detergents, and dry cleaning, and answer the question, how is it that soap cleans?

The class will culminate in a soap making lab where students help create a batch of artisan quality bar soap that can be used at home. This class gives a great blend of high-tech science and DIY. No experience in biochemistry is necessary and all are welcome!


Dan Fried

Dr. Daniel Fried is an assistant professor of chemistry at St. Peter’s University and has a Ph.D. in organic chemistry from Yale University. He has run programs for biochemistry learners of all ages around the Greater New York area, and believes that everyone, regardless of age or background can learn high-level science. Part of his unique teaching method stems from his experience as an artist and musician. He blends pedagogy from the arts with science, creating a learning environment that allows students with diverse learning styles to thrive. In his courses, Dr. Fried emphasizes 3D molecular modeling to show the beauty, form, and function of the biomolecular world.
