Restorative Soups Class on April 28 at 2 p.m.
Chilled Emerald City Soup: Fresh herbs, arugula and avocado topped with pickled yellow beets, purple diakon radish, scallion curls and marigold petals.
Exotic Mushroom Soup: Shiitakes, Cremini and Oyster mushrooms sourced from Gonzales, TX. This soup features chickpea miso, homemade vegetable stock, cashew cream and fresh thyme from my garden.
Noodle Free Spring Rolls with Roasted Almond Satay: This recipe features local sunflower sprouts, goji berries, umeboshi plums, grated carrots, avocado slices, fresh horseradish, ginger root and basil leaves.
These classes provide an opportunity to improve your knife skills, flavor building techniques, nutritional aptitude and presentation capability. This hands on class will have loads of choices so every student can craft their own signature bowl of soup and Spring roll. We will be constructing contemporary designs that are flavorful, attractive, health supportive and free of lactose and gluten. Oil free is also an easy option.
