While attending the College of Idaho, Kris Komori worked in restaurants to help pay for school. He started as a dishwasher, then prep cook, server and eventually manager before deciding that this was the industry he wanted to pursue. After graduating with a B.S. in Biology he moved east to attend culinary school in Vermont. After a brief stint in Seattle he moved to Portland. He worked in a number of food related jobs from line cook to butcher, cheesemonger to sous chef. He and his wife moved to Boise in the summer of 2013 and he took the position of Chef de Cuisine at State & Lemp later that year. His inspirations derive mainly from his childhood and ingredient seasonality, although after 400 dishes at the restaurant, ideas come from all over, especially local artists, winemakers and brewers.
