Eggs are amazingly versatile, part of a small club of ingredients that appear in dishes both sweet and savory across a huge span of culinary traditions. But the simplicity of the humble egg means that good technique is all the more essential. We all know what it looks like when they aren’t done right: hard-boiled eggs end up with chalky, grayish yolks, and poached eggs get overcooked. Fried eggs are a mess of rubbery whites and broken yolks, while scrambled eggs too often become dried out and bland. In this class, we’ll cover these four egg cooking techniques—poaching, scrambling, steaming and frying—and address the common pitfalls of each one. You’ll learn why we prefer steaming to boiling, our low-fuss approach to poaching, and the case for eggs scrambled in olive oil instead of butter. We’ll equip you with the science you need to ensure your eggs are cooked exactly to your liking, every time. Join us for a class that takes the guesswork out of eggs.

One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive the list of ingredients and equipment you'll need to cook along with us, if you choose.
