Our second class will allow a wide variety of recipes to be made and sampled such that each participant is able to identify their favorite Carbohydrate Substitute

Breads – One of the most missed items when moving to a Keto diet. We will make several types of breads from Teff, Quinoa and Flax Meal. To ensure the breads stay together, we will experiment with baking powder, xantham gum, and vital wheat gluten. No better way to test it out than to have crostinis made.

Rice – If you’ve been following this diet, you know that regular white rice is not suitable to get the body into Ketosis. We’ll go through a quick review but if your goal is to minimize carbs, we need options. So we will explore Shirataki Rice, Cauliflower Rice, and Tofu Rice. and yes we will have a few recipes to go along with them.

Pasta – Of course we will try the flours above to make some noodles, but we will also explore tofu sheets that can be cut into noodle. Shirataki Noodle will also get a nod as they are made from Konjac starch and carb free along with the standbys of Spaghetti Squash and Zoodles. Our sauces will include Marinara, Pesto and Alfredo.
