An Adventure with Rocky Mountain Micro Ranch and TEDxMileHigh Speaker, Eric Kornacki of Re:Vision.

Join us to explore how you can introduce insects into your diet – and most importantly why we should be eating more bugs and less meat!

Rocky Mountain Micro Ranch – Colorado’s first and only edible insect farm – will take us on a tour of their facility and share how they grow edible insects that are a sustainable food source, nutritionally dense, and equally important — delicious!

We will check in with TEDxMileHigh speaker Eric Kornacki to explore how Re:Vision is working to cultivate thriving, resilient communities by developing local leaders, growing community food systems, and building a locally-owned economy.

Wendy McGill (RMMR) and Promotoras from Re:Vision will lead us through a cricket-papusa cooking class.

We will spend about 20 minutes walking outside. Please dress for the weather!

ABOUT OUR HOSTS

Wendy Lu McGill is the Founder/CEO of Rocky Mountain Micro Ranch, Colorado's first and only edible insect farm. A woman-founded startup raising crickets and two other species in a modified shipping container heated by solar power, Rocky Mountain Micro Ranch sells edible insects to food manufacturers, restaurants and anyone with the daring to chose a delicious, nutritious and sustainable food. Coming from nearly twelve years working with international aid agencies around the world, as well as a background in sociological research, Wendy Lu brings a global perspective and deep understanding of the why and how of enjoying insects as food.

Eric Kornacki is driven by the belief that building a sustainable world begins by creating viable models that are place-based and empower people to own the solutions within their community, Eric Kornacki co-founded Re:Vision in 2007 and today serves as its Executive Director. Re:Vision’s work to build a community-owned food system that increases access and affordability to healthy food while creating economic opportunity in one of Denver’s most vulnerable neighborhoods has created the largest community-led urban agriculture program in the country with more than 400 families now growing their own food.
