Both restaurants have achieved 4-star certification with the Green Restaurant Association and are providing an example of successfully integrating sustainability with the bottom line.

Nancy has a 20 year track record of successfully growing businesses of all shapes and sizes. Prior to launching Compass(x) Strategy, Nancy was a Consulting Director at Zyman Group, a marketing strategy consultancy founded by Sergio Zyman, the former CMO of Coca-Cola. Nancy honed her business building and marketing skills running some of the world’s most iconic brands including Pillsbury, Old El Paso and CorningWare. Nancy earned an MBA from the Olin School at Washington University and a BA in Economics and Psychology from Tufts University.

Architect and educator Katherine Darnstadt is the founder and principal of LATENT DESIGN, an architecture collaborative of individuals whose projects focus on social, economic and environmental impact beyond the building. Katherine uses design to make the invisible forces impacting a project at local and global levels; policy, culture, climate; visible through architecture. Her firm is enhancing existing design practice and education to proactively engage in community engage in community based participatory design. Her firm's work spans urban planning, new construction civic structures, commercial interiors, residential, urban agriculture and speculative interventions.

Community educator, entrepreneur, and health professional, Davies, revels in the wisdom of the red wiggler worms. As Urban Worm Girl™, she educates the community about the ease and benefits of recycling kitchen waste with composting worms. In 2008 Davies developed, Urban Worm Girl™ to spread the word about vermiculture, to reduce landfill waste and to promote returning nutrients to the earth. Since its’ beginning, the companies mission has been to remind each of us of the interconnectedness of all beings, and guide us towards a more mindful way of life. In addition after earning a degree in Occupational Therapy from the University of Illinois, Davies spent the first 16 years of her career establishing a holistic out-patient physical rehabilitation practice.
