Cooking with Sustainable Meat: Pork

In many parts of the world, it’s common to eat pork to celebrate the New Year as a sign of abundance and good luck. We’ll make one of our favorite winter comfort foods called Hoppin’ John, a one-pot dish of black-eyed peas and uncured bacon. We’ll also taste Vermont Salumi’s delicious sausages and talk about how to use some other simple cuts of pork, like pork chops and boneless ribs.
