Description

At last, learn everything you've always wanted to know about this nutrition-packed foodstuff!

Students will learn perfect technique to separate the yolk from the white, to soft boil, hard boil (and peel), scramble and poach the illustrious egg to create a few of these favorite egg dishes:

  • Deviled Eggs
  • Frisée Salad with Poached Egg
  • Omelettes, Two Ways
  • Custard
  • Meringue
  • Floating Island Dessert

Morning, noon or night, your egg game will never be the same!

Skills covered: testing for egg freshness; techniques for cooking eggs to be enjoyed both hot and cold, including to scramble, poach, hard and soft boil, plus two approaches to omelettes; properly making custard and meringue.



About the teacher: Madelaine Bullwinkel has been teaching the culinary arts for over two decades. She also leads immersive culinary tours in various regions of France. The Chicago Tribune honored Madelaine with the Good Eating Award in 2001.
