Cooking Class: Paella Perfecta

As early as the 10th century, when the Moors began cultivating rice on the central eastern coast of Spain, Valencians enjoyed a grand dish of rice, vegetables, meat and seafood at festive family gatherings and religious feasts. Today, paella remains one of Spain's most well-known dishes worldwide. Contrary to popular belief, it is not the national dish of Spain but it does remain a revered regional Valencian dish, exemplifying the beauty of quality ingredients.
Learn the ins, outs, and in-betweens of the infamous paella -- a Shrimp, Chicken, and Mussell Paella with Saffron, to be exact -- in this hands-on class.
Skills covered: breaking down a whole chicken; cleaning (deveining) and peeling shrimp; knife skills; making homemade stock; developing layers of flavor.
About the teacher: Ronak Patel is the owner, chef, and instructor of his own private dining company, Chef Ronak. He attended Le Cordon Bleu in Chicago and has worked for numerous catering companies including Chef Daniel Private Dining, Creme Catering, and Gourmet Gorilla. His affection for local food and healthy eating shows in his additional work at the Peterson Garden Project Community Cooking School, Purple Asparagus, Sugar Beet Food Co-op in Oak Park, and Cook, Cork and Fork in Palatine.
