St. Patrick's Day was initially billed as a feast day in honor of the charitable St. Patrick himself, a chance for those abstaining during Lent to let loose -- minus the alcohol. It wasn't until the late 20th century that Ireland lifted the ordinance that had kept all businesses closed on that day, including pubs!
In this hands-on class, students will recreate a contemporary Irish feast:
- Mussels in Garlic Cream Sauce
- Beef & Guinness Stew with Colcannon (creamy potatoes with kale or cabbage)
- Oatmeal Baked Apples
There, there -- it wouldn't be St. Patrick's Day without Guinness!
About the teacher: Ronak Patel is the owner, chef, and instructor of his own private dining company, Chef Ronak. He attended Le Cordon Bleu in Chicago and has worked for numerous catering companies including Chef Daniel Private Dining, Creme Catering, and Gourmet Gorilla. His affection for local food and healthy eating shows in his additional work at the Peterson Garden Project Community Cooking School, Purple Asparagus, Sugar Beet Food Co-op in Oak Park, and Cook, Cork and Fork in Palatine.
