Our House Butcher, Scott Weiss, and Executive Chef, Liam LaCivita, team up to resurrect the art of butchery by demonstrating the correct way to break down a whole pig. Join in as we butcher a whole pig, from separating the rear legs that will be used for prosciutto to the loin and chops, to cuts that will be cured as salume. The demonstration of butchering from nose to tail will be followed by a tasting of some of our handiwork, featuring a pasta meal with pork sausage. Buy your tickets today and don’t miss out! To enjoy a meal featuring the freshly butchered pig, please join us for a Pork-Centric Dinner at the Chef’s Table: Butcher’s Cut this weekend.
