Description

Summertime in Chicago means rooftops, patios, and backyards, plus trips to the lakefront and the park. What better time than summer for a picnic? Learn a few favorites that are as transportable as they are tasty in this hands-on class.

Students will learn to make these perfect-for-picnic dishes:

  • Tomato Gazpacho with Garlic Croutons
  • Muffuletta with Olive Salad
  • Cold Tortellini Salad with Italian Vinaigrette

Skills covered: working with vegetables; making homemade croutons; vinaigrette fundamentals; building sandwiches with multiple meats intended for pressing.

About the teacher: Ronak Patel is the owner, chef, and instructor of his own private dining company, Chef Ronak. He attended Le Cordon Bleu in Chicago and has worked for numerous catering companies including Chef Daniel Private Dining, Creme Catering, and Gourmet Gorilla. His affection for local food and healthy eating shows in his additional work at the Peterson Garden Project Community Cooking School, Purple Asparagus, Sugar Beet Food Co-op in Oak Park, and Cook, Cork and Fork in Palatine.
