Description

Everyone loves a little healthy competition, but do you have the chops to make it in a cook-off?

We’re pleased to present Traditional Wisdom vs Future of Food, a cook-off that pits two teams whipping up dishes and drinks inspired by the past and future. Team Traditional Wisdom represents the wealth of knowledge from the past —think fermentation and herbalism. Team Future of Food represents the possibilities that science and innovation can bring, such as CBD infusions and plant based meat or dairy alternatives.

The Cook-off
Two teams will battle it out!
TEAM 1: Traditional Wisdom - this team represents the wealth of knowledge from our food heritage —think fermentation, ayurveda, traditional Chinese medicine, herbalism, etc.
TEAM 2: Future of Food - this team represents the possibilities that science and innovation can bring, such as cultured meat, cricket powder, and CBD infusions.
A panel of judges will score the chefs according to taste, healthiness, and alignment with the theme.

The Judges

Jeremy Nelson is a chef and forager who has been working in Bay Area restaurants for over a decade. He was the Chef de Cuisine at Encuentro in Oakland, where he honed his skills in produce forward farm-to-table cooking. He then joined the kitchens of Bay Wolf, Acquerello, and Lazy Bear (the last two both earning 2 Michelin stars).


Chiara Cechhini is US Director and a co-founder of Future Food Institute, an international NGO aiming to inspire and empower individuals, companies and communities to rethink our food system. She is also a Research Scholar at UC Davis working on building food system semantics to enable food care, and has been involved with the World Economic Forum and GrassRoots Hub to support local entrepreneurship.

There will be sampling and experiential learning stations from our partners.
