Here at the Institute's Department of Spirits we’re very excited to offer Cocktail LAB, our newest and most intriguing cocktail class to date. Cocktail LAB, is a 3-hour class, with more time for drinking and enjoying our selection of artisanal cocktail snacks. Not only will Cocktail LAB be of interest to students who have already taken our Cocktail Crafting and Gin & Tonic 101 classes, but it’s also the perfect entryway for those who haven’t – no prerequisites!

[ Homemade Vermouth ] Our easy method for aromatizing & fortifying wine with botanical infusions
[ Vin de Pamplemousse ] Pamplemousse is French for grapefruit, naturellement. Vin de Pamplemousse is a citrus-based aperitif. Based on Kevin West’s, recipe (our esteemed Dean of Sweet Preserves), this Vin de Pamplemousse is made with mixed citrus, vanilla beans, chamomile, vodka and white wine.
[ Jamaica-Ginger Shandy ] Originally a way for light drinkers to keep up with power drinkers, nowadays a Shandy is something everyone can enjoy. A light, refreshing mix of beer, hibiscus and ginger, we just know this is going to be the drink this summer.
[ Homemade Tonic Syrup ] Our homemade tonic syrup is so popular, we just had to make it again. Our version is the farthest thing imaginable from that sad, store-bought, factory-made stuff. (Twist our arm and you might just get us to teach you the steps for making a proper Gin 'n Tonic during class.)
[ Clear Ice ] Back by popular demand, Dean Daniel Kent will reprise his never-seen-on-TV method for making clear ice at home. Be prepared to stand up and cheer!
Class will be held at Greenbar Craft Distillery in DTLA. Greenbar is L.A.'s first distillery since Prohibition and creates the world's largest portfolio of organic, handcrafted spirits. After class, we’ll get an exclusive tour of the distillery to see how the spirits we've used in class are actually made.
