Classic Parisian Bistro - with Mark Valentine

Chef Mark Valentine will demonstrate classic Parisian bistro dishes with a modern interpretation of freshness and lightness. Soupe Cresson-Pommes de Terre, a classic spring soup features watercress potatoes and leeks. The next course will be Salade Lyonnaise, a salad of Frise, poached egg and bacon lardons. For the main course – Coquilles St. Jacques, gratin scallops with mushrooms and Gruyere cheese. To finish the meal Chef Valentine will prepare Mousse au Chocolat.

Cost: $75 each student

Mark Valentine is the owner and Executive Chef of Kitchen to Table Foods. He was classically trained in France, and has cooked in Paris, San Francisco, Portland, Nantucket, and Boston. His restaurant experience includes Chez Panisse, Stars Restaurant, and Zuni Cafe. www.kitchentotablefoods.com
