Back by popular demand - Enchiladas!

We are delighted to introduce a series of cooking classes with Elena Hatfield of Pibil Columbus Catering. Elena will teach us how to make some of the most beloved authentic interior Mexican dishes and provide colorful and interesting insights into the history and culture of each recipe.

Rolling tortillas around food for a meal or a snack easily eaten out of hand originated in Mexico at least as far back as Mayan times. The first enchiladas were likely made and eaten in the lake region of the Valley of Mexico with a small whole fish as the filling. Variations on enchilada fillings and sauces are endless! The practice of adding cheese to enchiladas is a rather recent development (in the last 100-300 years!) with surprising roots in the Swiss immigrant communities of Mexico, but is a common addition to the dish today.

Enjoy a welcome beverage and snack when you arrive. Then roll up your sleeves and get busy in the kitchen! In this class, we will make homemade tortillas and three enchilada fillings – chicken, beef, and Panela cheese – and two sauces: Salsa Verde (green chile sauce) and Chile Rojo (red chile sauce). You’ll sample one of each in the class and take home a pint of both sauces to enjoy with family and friends.

About Elena:

Elena Hatfield was born in Mexico City. Like many Mexican families, her home centered around the kitchen and the making and sharing of traditional foods. From the age of 3, Elena was in the kitchen with her grandmother and mother helping prepare favorite family meals and dishes. As an adult, Elena traveled the world as a flight attendant tasting and learning about the traditional foods of the countries she visited and bringing the knowledge and recipes back to her own kitchen. Today, Elena loves to cook and entertain family and friends with bountiful and delicious meals. She’s also a key contributor to menus and events served by her friend Alex Flores Perez of Pibil Columbus Catering.

About Alex:

Alex was born and raised in Mexico City and spent his young adult years in Playa del Carmen. He recalls spending a good part of his youth at his grandparents’ home who never needed much of a reason to throw a party and cook up a feast. After college and a detour through Monaco, Alex returned to Mexico City and began working under the tutelage of the famed Mexican chef Ricardo Munoz Zurita. Alex launched Pibil Columbus Catering in 2016 with a mission to bring authentic interior Mexican food to the American table and dispel the notion that Mexican food is all rice and beans and hard-shell tacos. His food is simple yet elegant, packed with color and flavor.

16 seats are available for this event. A minimum of 8 registrants are required to hold the event. All ticket purchases must be made prior to 5:00 PM, June 28. No refunds or cancellations after June 23. If you are unable to attend, tickets are transferable to other individuals with notice to 1400 Food Lab at 614-636-3164. Tickets are NOT transferable to different events.
