Raspberry Cider :: Tête de Moine: Tête du Moine is a raw cow's milk cheese made by Swiss monks. Its name means "Monk's Head," and the traditional way of serving it is to curl it on a Girolle rotary cutter, creating lovely little florettes. It is an alpine style washed rind cheese that is mild and creamy with a slight funk. The florettes make this cheese FESTIVE AS "FUNK!"
L'Acier :: Petit Agour: A French Basque cheese from France's Pyrenees region. Pasteurized sheep's milk cheese aged 5 months. Covered in the famous paprika from the region, piment de Esplette, which gives the rind its reddish color. The flavor is nutty, creamy and semi-hard. The color of the rind on this on this one makes it look like it is wearing an elegant red party dress!
Cascara :: Pecorino Moliterno al Tartufo: This luxurious and holiday party-worthy pecorino is aged for six months before earthy black truffle is added to the mix. Once the cheesemaker deems the un-truffled wheels delicious enough in their own right, they are sent North--to truffle country!--to be ever-so-delicately drilled and filled with rich truffle paste. The result is a visually stunning cheese that manages to taste even better than she looks. Its truffle, how much fancier can you get??
Pear Cider :: Shropshire Blue: If you've been to England, you've probably seen it around: the carrot-colored paste and those royal blue veins. The orange color comes from annato, a natural, vegetable food coloring found in many cheeses. Full-flavored and unpressed, this bright orange cheese has a surprisingly smooth texture. A golden russet rind forms after each cheese is made by hand, creating a sharp, tangy cheese that stands out among its blue brethren. Try it with the chocolate - lavishly brilliant!
