The Chef’s Collective Lab invites ChefPV (of Buggin’ Out) visiting from Texas to host a Bug Apetit! Halloween ento-feast supperclub!

The supperclub will be serving a 7-course entomophagy tasting menu:

Little Herds: Proceeds of the dinner are donated to this educational nonprofit based in Austin, Texas, teaching the next generation about insects as a resource efficient, nutritious and delicious food or feed through experiential STEAM based programs; family friendly events; public advocacy outreach; and partnerships with educators, universities and other organizations.



Culinary thought leader Don Peavy—also known professionally as “ChefPV”—is transforming what we eat and what we think about what we eat. His is a platform of sustainability, entomophagy (the consumption of insects), and social and political awareness. As a full-spectrum chef, and progressive voice in the food industry, Peavy is making profound change more digestible and delicious for everyone.

Chef's Collective Lab is an underground supperclub society of food industry movers & shakers - foodies, chefs, restauranteurs, restaurant employees, restaurant investors, culinary educators, food publicts/ bloggers, food photographers. 

Our guest is in the kitchen! During each supperclub, Chef's Collective Lab hosts an indie chefs who is visiting NYC to provide him or her with the culinary platform and audience that they typically do not have in their local countries (i.e. sous chefs working under an executive chef, pop up/food truck owners). 

The guest chef creates his or her own chef's tasting menu and paired with a NYC executive chef for menu consultation while Chef's Collective Lab provides the venue, food ingredients, and marketing for the night! At the end of the dinner, the indie chef will be introduced to a panel of dinner attendees who will provide mentorship on plating, menu design, and restauranteuring, financing advise and more!
