Whole Muscle Charcuterie & Cold Smoking with Meredith Leigh, Author: The Ethical Meat Handbook & Pure Charcuterie

Join local author Meredith Leigh for a class exploring whole muscle curing and cold smoking.

Participants will begin the process of a simple cured ham, and learn the technique required to finish the project at home.

We will cover fermentation and drying, and also place a special emphasis on cold smoking technique, including options for home-built DIY cold smokers.

We will enjoy a number of types of charcuterie and salumi along with some local beers and imported wines.
