About this Event

CMB Training Workshop

The status of Certified Master Baker is granted to those who demonstrate mastery in a wide range of bakery products. It challenges candidates and showcases their commitment and professionalism. This two-day workshop is designed to help experienced bakers practice their skills and answer any questions or concerns they might have about the CMB practical exam. The workshop provides hands-on experience with products produced for the CMB exam, time-line development strategies and guidance from experienced CMB judges. Gain valuable insight working under the guidance of CMB judges and have the opportunity to have products critiqued so you can feel fully confident and prepared to take your CMB exam.

This class is intended for current CMB candidates and bakers interested in becoming CMB candidates. Attendees should have 10+ years of retail baking experience, or alternatively, have already earned a CB with the Retail Bakers of America.

Cost: $350 per person ($325 RBA member rate)

Chef Lee Ann Adams, CMB - BIO

Lee Ann Adams is a Certified Master Baker living in Altoona, Pennsylvania where she works as the R&D manager for Bakery and Ready to Eat foods at Sheetz, Inc. For the past 3 years, she has been the lead judge for all the CMB exams conducted by the Retail Bakers of America. Prior to her position at Sheetz, Lee Ann was an Associate Professor of Baking and Pastry at the Culinary Institute of America, the Executive Pastry Chef for The Pennsylvania State University, Corporate Pastry Chef for Dantes Inc., and the Pastry Chef at the Atherton Hilton Hotel. Her training began at Johnson & Wales University with a degree in Baking & Pastry and then continued at the National Baking Center and San Francisco Baking Institute where she studied artisan bread baking. Lee Ann has competed for a spot on the United States Bread Baking team competing at the Coup du Monde de la Boulangerie in Paris, France in 2002, 2005, 2007. She was a three time national finalist and twice selected as the team alternate for the competition. She is also a member of the Bread Bakers Guild of America where she was a past member of the board of directors and the education coordinator for Camp Bread.
