Topic: Pediatric Celiac Disease: Gluten-Free For Growth
Dr. Kimberly Newton attended medical school at the University of Pittsburgh School of Medicine, completed her residency in Pediatrics at New York Presbyterian Hospital- Cornell, and fellowship in Pediatric Gastroenterology at Hasbro Children’s Hospital- Brown University. Dr. Newton also completed an advanced fellowship in Pediatric Hepatology and Liver Transplantation at Mount Sinai Hospital/School.
Dr. Newton currently directs the Pediatric Celiac Disease Clinic at Rady Children’s Hospital-San Diego. Dr. Newton also serves as the interim Medical Director of the Pediatric Liver Transplant Program at Rady Children’s Hospital, which has performed over 40 liver transplants to date, with excellent success rates and outcomes.
CLINICAL & RESEARCH INTERESTS
Dr. Newton is primarily interested in pediatric celiac disease. She directs the Pediatric Celiac Disease Center at Rady Children’s Hospital-San Diego, and is associated with the Warren Medical Research Center for Celiac Disease at UC San Diego. Dr. Newton is creating a comprehensive database for pediatric celiac disease patients that will serve as an important resource for the further understanding of genetic, environmental and immunologic factors that contribute to celiac disease development in childhood. Specific research endeavors will focus on the investigation of gut microflora and its relationship to celiac disease onset, in addition to the evaluation of potential biomarkers for monitoring celiac disease activity and dietary compliance.

Brian’s love of food began at a very young age, as his parents owned several restaurants and recently celebrated their 26th anniversary in business. He grew up learning to prepare, know, and love not just ordinary food, but great food. In fact, it was this early passion for wholesome cuisine that led him into the retail advertising industry. In 2008, Brian, his business partner, and a Swiss-born chef (who is a member of the American Culinary Federation) founded a successful brokerage firm that creates new items for a number of national retailers and shopping clubs. You may have even seen Brian on NBC, FOX, CBS, ABC, and QVC talking about the benefits of adopting an all-natural diet. His advertising tenure has also included working with the following companies: The Kroger Company, Robert Mondavi Wines, Idaho Potatoes, Hillshire Farms, Red Lobster, Sam’s Club, and other well known food/beverage brands. Sometime over the course of working with these companies, Brian was appointed the Director of Marketing for Cedarlane Natural Foods, the second largest frozen organic food company in the nation. While at the helm of Cedarlane, he sold the first “made-with-organic” frozen line that Wal-Mart ever carried. Additionally, he worked one-on-one with Dr. Barry Sears, the author of the New York Time’s Best Selling Book The Zone Diet. The Cedarlane Team and Dr. Sears advanced the development and launch of the Zone Diet frozen meals. These meals adhered to the rigorous standards set forth by Dr. Barry Sears in The Zone Diet and other books that he has written over the years. Brian eventually became the spokesperson for the entire Zone Diet frozen line, appearing with Dr. Barry Sears on several national and local mediums. Today, Brian lives in Denver, Colorado, with his lifelong partner. They have celebrated being together for over sixteen years. They are also the proud owners of two adopted dogs, Weimer, a Weimaraner, and Zoe, a Dalmatian.

Topic: Understanding the Gluten-Free Diet
Dr. Algert curently works for the University of California Cooperative Extension in Santa Clara County managing 1 million in nutrition education contracts from the US Department of Agriculture. Formerly she was the Clinical Reseach Nutritionist at the Warren Celiac Center, University of California, San Diego Medical Center where she developed a clinical care and research program for adult and pediatric patients. Her advice on gluten free diets can be viewed online; she is one of the featured speakers in two Warren Center lectures on Celiac Disease featured on UCSD television–over half million people have viewed the lectures since they were posted in 2008.

A retired Navy pilot with a Master of Business Administration, Karen Fine found her true calling when her eldest son was diagnosed with celiac disease at 22 months old. Motivated by the lack of information available, Fine began researching, experimenting and eventually blogging about her experiences. Her first blog, Mom Cooks Gluten Free, won the 2010 Leading Moms in Business competition sponsored by StartupNation.com. In 2006, Fine co-founded the Gluten Free Foundation to “provide resources to enhance the lives of people living a gluten free lifestyle.”
Fine is the author of three children’s books, How I Eat Without Wheat, Veggiesaurus Lex and Nature’s Candy and will soon be releasing her fourth entitled Water Rocks! She inspires both children and adults to embrace the gluten-free lifestyle for better health though her speaking engagements, cooking classes and blog Fine Cooks… everything gluten free.

While overcoming some personal health issues, Peter began learning about more food and nutrition and how to apply basic foundational health principles to his recipes. Since completing a culinary training program four years ago, he has presented many food demonstrations locally. He has work experience in various restaurants in Louisville, Kentucky and the food service kitchens of Wild Oats and Whole Foods Markets. In addition, he has served as a personal chef for clients with various health concerns. Having tried different approaches and nutritional interventions, he recognizes the importance of empowering himself and others about making better lifestyle choices.

The Donna Means School of Irish Dancing was established in 1977. It is under the direction of Donna Means King. Before opening her school, Donna competed throughout the United States, Canada, and Ireland. Donna retired from competition as the undefeated California, Western States, and Western Canadian champion.
The students of the Donna Means School of Irish Dancing have a long history of success. Many of Donna’s students have gone on to follow in her footsteps, representing the Western United States at the North American and World Championships.
The dancers enjoy entertaining during the year, especially on St. Patrick’s Day!
