This immersion case study will focus on the refreshingly obvious cure for summer, Sauvignon Blanc. Known as the “savage” white because it will grow just about anywhere, Sauv Blanc truly shines in certain corners of the world for reasons most people don't completely understand. This class is a "must-take" for anyone serious about understanding wine, not because Sauvignon Blanc makes prestigious or expensive wines, but because understanding Sauvignon Blanc is the key to understanding wine. It has a unique talent for showing the components of its environment in a more-pronounced way than can be discerned through other varietals, which makes it an excellent candidate for concise instruction and real learning. Through a mixed-case of 12 different wines, we will explore how Sauvignon Blanc expresses itself differently in Sancerre, Puilly Fume, Bordeaux, California, Chile, New Zealand, Australia, and South Africa, just to see what we learn. We will learn what underlying factors give expressions from Sancerre and Puilly Fume their signature mouthfeels, and why Chilean Sauv Blanc often seems sweeter than other expressions. We will learn specifically what makes Marlborough (New Zealand) Sauvignon Blanc smell the way it does (which no one wants to tell you outside of this class,) and we will tangibly experience first-hand what the Sauvignon Blanc grape teaches us about ALL wines, and how we can use that information to improve our understanding and enjoyment of wine. This sometimes neutral, occasionally unremarkable grape makes for not only a great teaching-tool, but it can be elegant and outstanding when it's grown in the right places. We will learn where those places are, so we know which ones to buy when we see them. Premium expressions only in this class. No Plonk here..

This program is hosted by The Somm School in association with Michael La Vardera. Michael has spent the last 22 years in the wine industry has served progressively increasing roles as Sommelier for NYC restaurants, Beverage Director, and ultimately Corporate Beverage Director for multiple-unit, multi-State restaurant groups. He is an accomplished Wine Educator who served nearly a decade as the Director of Wine Education for a national supplier of import brands, where he also evaluated and selected which brands to import in the United States. He has also appeared on Television as host for 2 cable television series on Wine Education, and as “Michael The Sommelier” on Food Network and Bravo TV. Michael comes to The Somm School via New York City.
