This immersion case study will focus on many of the most-recognized styles of non-fortified dessert wines. Sweet wines have been universally cherished in the courts of Emperors, Pharos, Popes, and Kings for thousands of years, but the young Sommelier-embryos and newly-minted wine enthusiasts of today don't seem to have caught the train yet, and many of these jewels are going unnoticed. We aim to rectify this apparent generational lapse of judgement through proper wine education. Specifically, we are going to explore and examine the world's most-celebrated dessert wines, recognize their quality, share our insights, and in doing so, help to bring these fantastic wines back into fashion. Through a mixed-case of 12 different dessert wines, we will explore, compare, and contrast their differing styles, production methods, qualities, and degrees of sweetness. We will consider which wines might work best with which desserts, and which ones won't work with desserts at all. Arrested fermentation versus, late harvest; botrytis infection versus non-botrytis wines; Eiswein versus Icewine; We will taste Sauternes, and Tokaji Aszu; Beerenauselese and German Eiswein; Icewine from Canada and New Zealand; Late harvest wines from California, and other selected regions. The pursuit of wine knowledge is a sweet life, and if you think you're ready to reach the next plateau in your wine education, then you may be ready to experience the sweet, sweet nectar.

This program is hosted by The Somm School in association with Michael La Vardera. Michael has spent the last 22 years in the wine industry has served progressively increasing roles as Sommelier for NYC restaurants, Beverage Director, and ultimately Corporate Beverage Director for multiple-unit, multi-State restaurant groups. He is an accomplished Wine Educator who served nearly a decade as the Director of Wine Education for a national supplier of import brands, where he also evaluated and selected which brands to import in the United States. He has also appeared on Television as host for 2 cable television series on Wine Education, and as “Michael The Sommelier” on Food Network and Bravo TV. Michael comes to The Somm School via New York City.
