This immersion case study will focus on how premium Cabernet Sauvignon performs in the most-famous California Appellation, Napa Valley. Cabernet Sauvignon has always been among the most-respected varietals on earth, but California's premium expressions have truly taken this celebrated varietal to another level, and have earned worldwide acclaim as a result. If you like big oak, less oak, super-premium fruit, or if you just like to spend a lot of money, the right Napa Cab can fill any desire, satiate any palate, impress any guest, and drain any wallet. Through a mixed-case of 12 specifically chosen Cabernets, we will explore together what makes Cabernet from this part of the world so damn good. Cabs from mostly in and around Napa will be explored, perhaps including some other premium sites. Rutherford, Oakville, Howell Mountain, Mt. Veeder, Stags Leap Districts, etc... We will look at the big names you likely already know, and introduce you to some you most-certainly don’t. Learn the Sommelier's secret Cabs that humble Stags Leap drinkers and slut-shame Cakebread-ers. This class is offered at a premium price. It requires a minimum number of 6 students to move forward, and will be limited to a maximum of 10 students.This program is hosted by The Somm School in association with Michael La Vardera. Michael has spent the last 22 years in the wine industry has served progressively increasing roles as Sommelier for NYC restaurants, Beverage Director, and ultimately Corporate Beverage Director for multiple-unit, multi-State restaurant groups. He is an accomplished Wine Educator who served nearly a decade as the Director of Wine Education for a national supplier of import brands, where he also evaluated and selected which brands to import in the United States. He has also appeared on Television as host for 2 cable television series on Wine Education, and as “Michael The Sommelier” on Food Network and Bravo TV. Michael comes to The Somm School via New York City.
