This immersion case study will focus on the Pradikats of German Riesling.

This immersion case study will focus on the Pradikats of German Riesling. Specifically, it will explore 3 levels of Pradikat wines (Kabinet, Spatlese, and Auslese) from 4 German Regions renowned for Riesling (Rheingau, Rheinhessen, Mosel, and Pfalz) to an extent which a much broader Foundation course on German wines cold never achieve. The issue with German Rieslings, is that they are broken down into different quality levels (Pradikats) denoting different degrees of ripeness at harvest, but these levels of ripeness show differently from different German regions. For this reason, it can be difficult to tell if one prefers the Pradikat or the region. So, we will examine one wine in each of those 3 Pradikats, from each of the 4 regions described, because we believe the only way to fully understand these quality levels as they relate to their respective regions is to compare and contrast them side-by-side. Through a mixed-case of 12 German Rieslings, we will endeavor to explore how this fascinating and versatile grape expresses itself as different Pradikats from different regions of Germany. The aim is to empower students to be able to distinguish Riesling in different quality levels, and from different regions of Germany. Learning the Pradikats of German Riesling is a basic standard of any proper wine education, but being able to tell them apart often requires instruction, and practice.

This program is hosted by The Somm School in association with Michael La Vardera. Michael has spent the last 22 years in the wine industry has served progressively increasing roles as Sommelier for NYC restaurants, Beverage Director, and ultimately Corporate Beverage Director for multiple-unit, multi-State restaurant groups. He is an accomplished Wine Educator who served nearly a decade as the Director of Wine Education for a national supplier of import brands, where he also evaluated and selected which brands to import in the United States. He has also appeared on Television as host for 2 cable television series on Wine Education, and as “Michael The Sommelier” on Food Network and Bravo TV. Michael comes to The Somm School via New York City.
