This immersion case study will focus on how California's King, Cabernet Sauvignon, performs across multiple California Appellations. Originally made famous by left bank Bordeaux, California has usurped the crown and taken Cabernet Sauvignon to new heights in quality, and expressed it in multiple degrees of ripeness across the board. California Cabernet owns the wine list in most American restaurants for good reason, because we can't seem to eat red meat without it. It's the go-to red wine for experts and novices alike. Fortunately, our beloved King thrives in a multitude of different microclimates, and California offers a wide spectrum of Cabernet examples from north to south for us to study. Through a mixed-case of 12 different wines, we will explore expressions of Cabernet Sauvignon from Napa, Sonoma, Carneros, Paso Robles, Lodi, the Central Valley, and several other Appellations and sub-Appellations, which will allow us to explore California Cabernet in a multitude of different styles and degrees of ripeness, with varying amounts of oak. It will show us how mountain fruit differs from coastal fruit, and valley floor fruit, and what effect varying levels of elevation and hydration have on the wine; California and Cabernet Sauvignon have become deliciously synonymous in recent years, and in this class, we will endeavor to experience why.

This program is hosted by The Somm School in association with Michael La Vardera. Michael has spent the last 22 years in the wine industry has served progressively increasing roles as Sommelier for NYC restaurants, Beverage Director, and ultimately Corporate Beverage Director for multiple-unit, multi-State restaurant groups. He is an accomplished Wine Educator who served nearly a decade as the Director of Wine Education for a national supplier of import brands, where he also evaluated and selected which brands to import in the United States. He has also appeared on Television as host for 2 cable television series on Wine Education, and as “Michael The Sommelier” on Food Network and Bravo TV. Michael comes to The Somm School via New York City.
