Butchering Poultry & Rabbit

Especially with Chickens, Ducks and Rabbits being such an important part of Maryland’s agricultural history, mastering the proper butchering of these animals is really part of our local culture. We’ll start by butchering a rabbit into its eight primal parts and braising the legs, creating a traditional northern Italian dish. We’ll then move onto a chicken, first removing the breasts and legs and then further process each primal cut. We’ll finish breasting and removing the legs from a duck. We’ll work on making confit duck legs, a stuffed airline chicken breast and a ‘ballotine’ of chicken leg stuffed with a farce made from the remnants of these animals. $69
