Butchering Lamb & Bison

Lamb is certainly one of the delicacies of the culinary world. Join us as we butcher an entire lamb during the class. We’ll cut it down in the primals and then go to work on each one generating everything from bone in rib chops to lamb leg steaks. We’ll also grind the trim and make the famous spicy lamb sausage Merguez and braise some shanks in the pressure cooker. We’re also fortunate to have our friends at Gun Powder Bison farm right up the road. So not having at least one bison primal in the entire butchering series just wouldn’t be fair. So, we’ll take some of their incredibly good rib primals and generate some huge ‘Flinstone-esque’ bone-in rib chops to roast. $89.
