Butchering & Cleaning Fish

As we all try to eat lighter meals on occasion, fish has become an integral component of these types of dinners. In class, we’ll demonstrate how to butcher a few large fish, cutting them into fillets, removing the skin and portioning. We’ll then put the class to work, butchering their own whole fish and portioning tuna and salmon. We’ll also learn how to cure a side of salmon, marinate tuna steaks and some other cooking techniques while the whole fish they butchered is roasting in the oven for dinner! $69.
