Butchering Beef I- The Veal Saddle, Beef Rib Primal

To get us started into the bovine world, we’ll break down an entire saddle of veal into some very delicious prime cuts; bone in loin chops and T-bone chops along with stuffing, rolling, tying and braising the veal breast. We’ll then examine how to butcher the beef rib primal into some classic cuts – the Delmonico steak, bone-in Cowboy steak and the standing rib roast. We’ll also take a more modern approach and cut the rib primal into three components; the Entrecote, rolled and tied Ribeye Cap and some Beef Back Split Ribs to throw in the pressure cooker. $89
