Christmas Eve means a lot of things to different people, but to those who celebrate the Feast of the Seven Fishes (Festa dei Sette Pesci), it’s always meant a lovely family gathering with multiple courses of fresh, delicious fish and shellfish. The Feast is an Italian tradition of serving 7 seafood dishes (or more!) on Christmas Eve, said to have begun in Southern Italy during early Roman Catholic days, when the tradition of abstinence from meat and milk products was common. In tonight’s class, we’ll enjoy our own Feast while learning the basics about working with various types of seafood: easy recipes, essential techniques, seasoning correctly, and how to properly check for doneness.
On the Menu: Sicilian Seafood Salad with Shrimp & Calamari; Seared Yellowfin Crudo with Meyer Lemon & Fresh Mint; Winter’s Eve Pea Soup Topped with Crab & Chive Salad; Linguine with Fresh Clams, Roasted Garlic, and Pancetta; Whole Roasted Branzino with Fennel & Thyme.
