About the class:
Building a beautiful soup at home is easy. At Clover, we make two types of soup each day - a brothy soup and a creamy soup. In this class, we'll walk you through the steps to making a brothy soup at home. We'll start with a discussion of stock (and how to make your own fresh stock at home). Then you'll learn how to build flavor through sauteeing onions, garlic, carrots, and then talk about the best ingredients to add during the cooking phase. Finally you'll learn the final, very important step: seasoning your soup so it sings!
This is a semi-hands-on class, so space is limited to 8 students.
About the teacher:
Enzo Pileggi is the Director of Food at Clover, supervising the creation of all the food prepped from scratch daily at the Clover kitchen in Inman Square. Enzo has a degree in Culinary Management from Johnson and Wales in Providence, and before coming to Clover in 2009, he made charcuterie and cooked for celebrities at the Four Seasons in Boston. He's also the one responsible for inventing the wildly popular Japanese Sweet Potato Sandwich : )
