Five course beer pairing dinner featuring a Chef Collaboration with Vista’s own Chef Stiver and Mum Foods' Chef Geo Ellis.

About this Event

Join us Friday, August 23rd at Vista Brewing for very special five course beer pairing dinner. Vista’s own Chef Andrew Stiver has invited Chef Geoffrey Ellis of Mum Foods to join him for a chef collaboration experience with a focus on fermentation and the Vista Farm’s late summer harvest.

The chefs will lead us through a hyper-local meal, teaching us how we can “save the harvest” by fermenting and preserving the Vista Farm’s summer vegetables and fruit for use until spring comes around. The menu will feature smoked and grilled meats from local Central Texas ranchers, including Mum’s famous brisket pastrami.

Begin the evening with a welcome beer and a stroll through Vista’s beer garden and farm. Beginning promptly at 8:00 p.m., the five course menu (to be announced) will be expertly paired with Vista brews, including two new releases: the wine-like Glen Rose Belgian Lambic-Style Ale, aged in fresh red wine barrels for over a year and Vista’s newest collaboration, Journey Rye Lager, brewed in partnership with Flying Machine Brewing of North Carolina.

Mum Foods is known for its smoked pastrami and was named the best brisket pastrami in Texas by Texas Monthly. Geoffrey “Geo” Ellis started Mum Foods in Austin area farmer’s markets and most recently opened a brick and mortar delicatessen on Manor Road. About Vista Brewing

Chef Stiver brings his unique perspective on modern Texas cuisine: hyper-local sourcing including fresh harvest from Vista’s 1-acre organic farm. Chef Stiver incorporates smoking and wood-fired grilling techniques, as well as house-made breads, pickling and fermenting.
