Beer Pair: Hustler of Culture Belgian Pale finished with Brett. 5.6%. Big fruit & funk character dominates the nose of the first beer to feature our house brett culture.
COURSE 2. RABBIT RAGU
Local rabbit confit, liver, brandy, tarragon, oles farm carrots, hand made strozzapretti, guanciale, bread crumbs.
Beer Pair: NYS Hopped IPA. 6%.
Hopped exclusively with hops from Hunter's Valley Hops in East Aurora. Aromas and flavor of pine, dank mint, grapefruit, and resin.
COURSE 3. SMOKED DUCK BREAST
Roasted cauliflower, pickled squash and pear, roasted pear puree, and rosemary-duck jus.
Beer Pair: English Strong Ale. 8%.
A playground for rich malt, the Maris Otter & Optic Malts in this beer provide a rich toffee and caramel character that is balanced by traditional Golding hops.
