Baking Class: Ice Box Pies

Refrigeration required! Back to our popular pie series, the pies in this hands-on class veer from the traditional flaky butter crust and opt instead for graham crackers and cookies as their base. Learn recipes and techniques for refreshing pies ideal as a nightcap to a summer cook-out.
Students will learn a foolproof recipe for no-fuss cookie and graham cracker crusts, plus three pies featuring nostalgic fillings and one of the season's finest fruits:
- Peanut Butter Caramel Pie
- S'mores Pie
- Strawberry Pie
Skills covered: making cookie crusts; using fresh fruit in baked goods; making and working with meringue; proper baking and refridgerating for cold pies.
About the teacher: Kelly Dull has worked at multiple bakeries and restaurants around the country, including Magnolia Bakery in Chicago and North Bakery in Providence, R.I. She has also taught a variety of pastry classes for Sur La Table in Illinois.
