Considered one of Chicago’s most popular restaurants, The Publican evokes the feeling of a colonial American beer hall with its rustic décor (like a large walnut communal table), an extensive international beer list, and owner Paul Kahan’s incredibly delicious pork- and seafood-centric menu. In Cheers to The Publican, Paul Kahan, Executive Chef Cosmo Goss, and editor and recipe tester, Rachel Holtzman, log their stories behind the food that inspires them and other cooks they honor. With over 150 photographs and 150 recipes, readers will find recipes ranging from fish and seafood to simple charcuterie to breads and spreads.

Join us on December 7 as we welcome to the store Paul Kahan and Rachel Holtzman to talk about the book, followed by a Q&A session. Snacks will be served, based on recipes from the book, with Rosé.




Tickets for the talk are $20. You can pre-order her book for an additional $35.28 (20% discount + sales tax); it will also be available for sale on the day of the event at full price.


Refund/cancellation policy: A full refund will be provided for cancellations requests received from customers up to one week (seven days) before the event. No refund or store credit will be provided for cancellation requests received less than a week before the event.




About the Authors:

Paul Kahan is executive chef and partner of The Publican and One Off Hospitality Group and has become the nationally recognized face of the Chicago food landscape. His businesses--Blackbird, Avec, The Publican (downtown and O'Hare locations), Publican Anker, Big Star, Publican Quality Meats, Nico Osteria, Dove's Luncheonette and The Violet Hour--are consistently top-rated in Chicago and nationally. In addition to leading food media, Kahan has been covered in USA Today, the Wall Street Journal, Vogue, Travel + Leisure, The Atlantic and the The New Yorker, among others. Food & Wine named Kahan a Best New Chef and the James Beard Foundation has recognized him as Best Chef Midwest.

Rachel Holtzman is a writer, editor and recipe tester. She co-authors projects on topics ranging from cooking and entertaining to wellness and mind-body connection. Prior to starting her company, she was an editor at Penguin Books and ELLE magazine, with a brief turn in the kitchen at Gramercy Tavern. She lives in Chicago.
