Learn how to incorporate regionally-produced artisan grains into your Thanksgiving meal. Make cornbread, corn stuffing and sweet potato pie.

About this Event

Sandra Holl, owner of Floriole and Rachel Bernier-Green, owner of Laine’s Bake Shop, both in Chicago, are back again for another edition of their popular Thanksgiving-themed class.

Thanksgiving is a time for many to gather warmly together around a bounty of food. Often times, though, the focus is on the main dish leaving the sides to play a secondary role. Want to know the secret to making those dishes command attention? Include regionally-produced artisan grains in the recipes to add flavor, texture and health benefits.  

Participants will make cornbread (gluten-free), corn stuffing, sweet potato pie with a combo rye wheat pie crust, and grain pilaf with butternut squash (vegetarian)—all with artisan grains. Farmer Andy Hazzard of Hazzard Free Farm in Pecatonica, Illinois, will be on hand to discuss growing and processing these grains on fields that have been in operation since 1847, connecting what happens there to the dishes that you’ll make. At the end you’ll leave with cornbread and pie that are not only delicious but also have a wonderful story to tell!
