Description

An in-depth look at non-gluten grains that require more cooking time and various techniques. Amaranth, Corn, Teff and Wild Rice will be broken down into the basic methods applied to grains. Absorption cooking, Pilaf style, quick cooking and pressure-cooking. Participants will get to see and taste side-by-side results. Grains will be prepared into salads, side dishes and vegetarian stews with polenta cake to finish.
