Event description

Description

Every Milk Street meal follows our cooking theory: a belief in how ingredients and techniques work together to create vibrant flavor. In this class, you’ll develop to a deeper understanding of cooking by learning and practicing this theory.

We’ll start with tasting experiments to understand the basic flavors and textures that form the foundation of our cooking theory. Then you’ll learn to create layers of flavor, another cornerstone of Milk street cooking. You’ll bloom spices to maximize their volatile oils, use citrus and other acids to carry flavor throughout a dish, and stir in handfuls of herbs to easily create balance and dimension in any recipe. By the end of class, you will understand why recipes work, how to evaluate and choose the best ones, and how to fix bad ones.

We'll prepare, explore and analyze Persian herb omelette, cilantro-jalapeno adobo sauce, cracked potatoes with vermouth, coriander and fennel, and French spice cake.

This is a hands-on cooking class led by Milk Street instructors.
