In this hands on class, you will learn techniques that will make your cakes stand out in a crowd. Mary will first demonstrate how to make a spectacular chocolate ganache cake that will be served at the end of the class. In the hands on portion of this class, you will be learning the steps of covering a cake with rolled fondant. Mary will demonstrate texturing and other decorating techniques used by professional bakers. Due to time constraints, you will work on a styrofoam cake dummy, covering the cake with fondant and making a fondant ribbon. Lastly you will complete the top of the cake with flowers you make out of gumpaste.
Mary Robichaud is a 2005 graduate of Johnson & Wales University, Providence, RI from the Baking and Pastry Arts program, and is owner of Gourmet Gateau. Mary enjoys sharing her knowledge while teaching others and giving them the confidence that they can make desserts worthy of any professional baker.
